Ingredients
  

  • 2 banana
  • 1/2 cup cup rolled oats
  • 1 egg
  • A dash of cinnamon
  • A splash of milk (dairy or plant-based)

Instructions
 

  • Beat the eggs in a bowl with milk, salt, and pepper.
  • Heat oil in a non-stick pan over medium heat.
  • Sauté vegetables for 2-3 minutes until slightly soft.
  • Pour the egg mixture over the veggies. Spread evenly.
  • Cook covered for 3-4 minutes or until the omelette sets.
  • Carefully flip and cook the other side for 1-2 minutes.
  • Serve hot with toast or as-is!
